Celler Grifoll Declara: A family tradition with the soul of Priorat

With winemaking roots documented since 1736, Celler Grifoll Declara is one of the iconic names of El Molar and the Priorat region. For over five generations, the Grifoll family has cultivated its vineyards with passion and deep respect for the land, blending traditional expertise with a strong commitment to sustainability and ecology. The winery practices organic and sustainable viticulture, using no pesticides or herbicides.

Located on the Les Solanes estate, the winery works with native varieties like Grenache and Carignan, planted on slate soils rich with marine fossils that lend a unique minerality to the wines. The vineyards include Grenache, Carignan, White Grenache, Syrah, and Merlot.

Grifoll Declara’s wines are a true expression of Priorat’s character: deep, elegant, and full of nuance. From young, fresh wines like El Gos to more complex creations like Predicat and Gran Predicat, each bottle captures the essence of a landscape and a winemaking approach that is patient and authentic.

Visiting this winery means discovering a living history — a family estate that has grown without losing its bond with the land and the people who tend it.

 


 

 



 Featured Wines 

  • Predicat: A young, natural red wine made with Grenache, Carignan, and a touch of Merlot. Aged for 9 months in barrel. Fruity, fresh, and mineral, with light structure and a smooth finish. Ideal with seasonal dishes. Very low in sulfites.

  • Gran Predicat Blanc: 100% White Grenache, fermented and aged for 15 months in barrel on fine lees. A creamy, deep white wine with marked minerality. Perfect for pairing with fatty fish or soft cheeses.

  • Gran Predicat Negre – Centenary Vines: Carignan from century-old vines on slate soils. Aged for 15 months in French oak. An intense wine with volume and a mineral character. Ideal for sipping slowly or pairing with game meats.

 

 



Mountain Wines – El Molar

  • El Gos Blanc: 100% White Grenache, fermented with native yeasts and aged for 3 months on fine lees. An aromatic, fresh, and fruity white with good volume and balance. Ideal for appetizers and light dishes.

  • El Gos Negre: Single-varietal Black Grenache. Brief aging of 3 months in French oak. A young, lively, and fruity red with a fresh and juicy texture. Perfect for casual drinking and light pairings.

  • TOSSALS Selecció: A classic blend of Carignan and Black Grenache from estate vineyards. Aged 9 months in wood. A natural red wine, fresh and elegant with marked red fruit. Versatile and food-friendly.

  • TOSSALS Selecció Especial: 70% Carignan and 30% Black Grenache from old vines. Aged for 14 months. A more intense, mineral, and rounded profile with structure and character. Ideal for hearty dishes.

  • TOSSALS Vinyes Centenàries: Century-old Carignan, fermented and aged in barrels for 24 months. A deep, creamy, and complex wine with pronounced minerality and excellent aging potential.

  • TOSSALS Expressions: Also 100% Carignan from century-old vines, aged 24 months. Made similarly to Vinyes Centenàries, but focused on expressing the purest essence of the soil and the varietal’s elegance.
